In operating a kitchen, either commercial or personal, many hats are required to make it a functional operation. Baking, cooking, sautéing, organizing, purchasing, cleaning up… the skills needed are all encompassing and varied.
In running a commercial restaurant, these tasks are magnified and there is seldom a break. In my opinion, if I had to fulfill all of the responsibilities, the one I would least enjoy would be cleaning. Come to think of it, in my home, these are my responsibilities, and yep, cleaning is the thing I least enjoy. The cleanliness and hygiene standards in our kitchen are very high, and we strive to maintain that standard in every area of the restaurant.
We have an incredible crew at the Coffee Pot Bakery Café. Our cleaners are no exception. Kristy Boegli is the crew manager. She sets a great example and does an extensive job of training. Her method of teaching is to have the trained crew teach newcomers while she supervises and makes necessary corrections. Our cleaning team at this time consists of some fairly young people who are so pleasant to be around. They do such a great job that when I hear people say things like, "This younger generation just doesn't know how to work," I want to tell them about our "younger generation" and how convinced we are that our crew is the cream of the crop! Although we'd love to have our team members stay with us until they reach retirement age that is probably unrealistic. Our hope is that as they move on, they’ve been well trained and continue in their future jobs with great attitudes, a good work ethic, and team spirit.
