Makes 2 Dozen
1/2 Cup Butter
1/2 cup Oil
2 Large Eggs
1 Cup Brown Sugar
1/2 Teaspoon Salt
2 Teaspoons Vanilla
Combine all ingredients in mixer, then add:
1 Cup Dated Chopped (Optional) 1/2 Cup Cranberries
1/2 Cup Raisins
1 Cup Shredded Carrots
1 Cup Pecans Chopped
2 Cups Granny Smith Apples Chopped
Add dry ingredients just to moisten:
2 Teaspoons Baking Soda
2 Teaspoons Cinnamon
1 Cup White Flour
1 Cup Whole Wheat Flour
Drop into muffin cups and bake at 350 degrees for about 20-25 minutes.
