Makes: 4 dozen
1 ½ lbs dates
3 ½ cups sugar
1 ¾ cups melted butter
4 eggs, beaten
3 ½ cups pecans, toasted and finely chopped
3 ½ cups rice crispy cereal
1 bag of coconut
Use a food processor or immersion blender to break up dates. Mix dates, sugar butter and eggs in a large pot. Cook at boiling for about 5 minutes, stirring often. Cool, then add the nuts and rice crispy cereal.
Drop by the Tablespoon into coconut. Roll into balls, then freeze until ready to serve.
