Chicken Curry Soup
Makes: about ¾ gallon
8 cups of water
1 cup onions diced
2 tbsp & 1 tsp curry powder
1 ½ tsp fresh lemon juice
1 tbsp black pepper
½ tsp bay leaf powder
¼ cup chicken base
2 tbsp fresh garlic chopped fine
1 ½ tsp dried parsley
1 tsp cumin
1 tbsp garam marsala
1 lb diced chicken
Combine all of the ingredients in a large pot. Cook for 1 ½ hrs.
Add: 2 lbs diced potatoes
Mix together:
1 can of coconut milk
¼ cup cornstarch
Immediately add this mixture to the pot. Stir until the soup starts to thicken, then add:
10 oz half & half
1 ½ tsp white vinegar
Remove from heat & serve.
