Mix together:
9 eggs
¾ tsp salt
2 ¼ cups milk
1 ½ tsp ground cinnamon
1 ¼ cups brown sugar
1 ¼ Tbs vanilla
2 ¼ cups heavy cream
½ tsp pumpkin pie spice
Put roughly 48 ounces of baked Cinnamon Rolls cut into 1-inch pieces into a greased 9 X 13 pan. You may also use a loaf of your favorite bread. The pan should be filled to the top with 1-inch pieces of baked bread of your choice.
Pour mixture over cinnamon roll/bread, press mixture into bread to absorb milk mixture & let set for 45 minutes. Bake at 300° in a pre-heated oven for about 1 hour or until set. Serve with vanilla sauce.
Vanilla Sauce:
1 cup sugar
½ cup butter, melted
1 egg
2 tsp vanilla
In a batter bowl, mix butter, sugar and eggs. Cook in microwave until sugar is dissolved, whisking often, about 5-6 minutes. Add vanilla. Pour vanilla sauce over the top of individual portions of bread pudding and top with whipped cream (optional) before serving. Bread Pudding tastes best when it is served hot from the oven.
BAKING TIP:
Don’t leave out the salt! Not only does salt contribute to the overall flavor of your baked goods, it controls the fermentation rate of yeast in bread and strengthens the gluten protein in the dough. Without salt, bread rises faster, allows holes to form and will taste bland. In cakes & cookies, salt enhances the flavor of the other ingredients and perks up the depth of other flavors. A tiny bit of salt enhances the flavor of chocolate significantly ;} wink:
