There's nothing like a delicious home baked pie to bring friends & family together. Equally as important as the crust, is the filling! Our delicious, mouth-watering, made-from-scratch fruit filling is sure to have your guests coming back for seconds.
(Makes two 9” Pies)
Ingredients:
4 cups Fruit (fresh or frozen)
1 cup Sugar
2 Tbsp Cornstarch
1 Tbsp Butter
In a microwave safe 2 qt. bowl, stir ingredients together until sugar & cornstarch is dissolved. Microwave on high for 6 minutes. Stir well & microwave another 5-8 minutes, until thick.
Add 4 more Cups of Fruit & 1 Cup of Sugar that has been mixed with 2 Tbsp Cornstarch. No more butter needs to be added. Stir well and let cool. The filling is now ready to be poured into 2 pie shells. Only fill to within ½ inch from top of shell; any more will overflow in the oven. Top with pie dough or streusel.
Place in freezer for at least 2 hours. If you are going to bake right away, preheat oven to 450º. Place pie on center oven rack. Once the oven is preheated, immediately turn the temperature down to 350º. Bake for approximately 1 hour. The pie is done when the crust is golden brown. Insert a knife into the center hole, and if there is a drip that is runny, bake longer. The filling is done when it reaches the consistency of jam, and drips slowly. Let set 30-40 minutes before cutting.
