PASTRY “A dough of flour, shortening, and water, used as a base and covering in baked dishes such as pies.” synonyms: crust, piecrust, ms: croute "two layers of pastry" “An item of food consisting of sweet pastry with a cream, jam, or fruit filling.” The Coffee Pot Bakery is known for its treats. When you get to actual numbers we sell more bars than anything else. Nonetheless, in all of my conversations where I have heard of what great treats we have, it almost always goes to “you have such great pies!” In addition to our regular pies, we have a nice selection of gluten free morsels so those who have a limitation in their diet can have a selection to choose from, not just settle on a few items that are gluten free.
Jennie always says that if you take butter and sugar and use them in the right combination you have created an addictive morsel. I think that is pretty theoretical in nature (but seems to be fairly true). The addictive quality can be modified and intensified for some by the introduction of chocolate to the recipe. A few people would argue that aspect but would lose the debate if talking to a chocoholic. In our bakery, we make a coconut cream and a chocolate cream pie, and it’s a rare day that every piece of those two pies hasn’t sold out by evening. In addition to our cream pies, we will bake from 4-6 more pies each day depending on the season. Jennie is an admitted chocoholic. There are worse addictions in life, but she loves our chocolate cream pie. She does limit herself to no chocolate in the late afternoon as the caffeine in the chocolate can rob her of her sleep. We have given some latitude to our bakers to create something delectable of their choice each week, so on a rotation basis they take turns creating something new to add to our bakery case. One of the latest delights is our chocolate mousse pie. Even Jennie has removed her limitation of late afternoon chocolate treats to indulge in our chocolate mousse pie. With all of our variety of pies, some 40 plus, this has become one of the favorites of all of our guests.
